This quiche-style dish is a great way to get all the food groups on your kid's breakfast plate and it's easy to make:
Mix in a bowl one egg, a teacupful of coconut or almond milk, 3 oz of grated cheese, 1 tbsp. of flour, a pinch of salt and some spinach (you can also use peas, onions, potatoes, etc..). Pour the mixture into ramekins and bake on 325 degrees for 25-30 minutes.
